Domaine Martin is located in Saint-Fiacre-sur-Maine, in the heart of the Loire’s Muscadet Sèvre et Maine AOC. There, fourth generation vigneron Dominique Martin sustainably farms his family’s 35 hectares of vines, focusing in particular on the Melon de Bourgogne grape. ‘Ocean’ is made from Melon de Bourgogne planted in 1950 and fermented in temperature-controlled underground glass-coated tank, then aged on fine lees for at least 9 months. The Atlantic influence can be clearly felt in these wines (no wonder they’re such a classic match with seafood!), with floral aromas of violets and apple blossom yielding to generous orchard and citrus fruit notes on the palate. Bracing acidity, a fresh saline streak, and accents of briny oyster shell and chalk alongside a squeeze of fresh lemon on the finish make this a natural partner to fish, quiche, or fried foods.
