FROM PRODUCER: Neverstill Wines, a trailblazing venture led by an all-female team, proudly announces its emergence into New York’s Finger Lakes wine scene with its June 2024 inaugural releases: a crisp chenin blanc and captivating riesling, poised to ignite interest in New York wine. Neverstill founder Christy Counts was drawn to the Finger Lakes by its emerging reputation for cool climate viticulture and its location in the eastern US. This pét nat is 96% Cayuga white and 4% riesling. Cayuga white is a hybrid varietal resulting from a cross between seyval blanc and Schuyler. We sourced ours from Simmons Vineyards on Keuka Lake. Known for its early ripening, crisp acidity, and aromatic profile, Cayuga white is a popular choice for sparkling wines. Harvested in September, the grapes were gently crushed, pressed, and partially fermented in stainless steel tanks. The wine was bottled unfined and unfiltered during primary fermentation, allowing it to finish in-bottle with a delicate sparkle. After aging on the lees, the wine was riddled and disgorged, with riesling incorporated into the dosage to enhance the aromatics.
