Honjozo sake differs from junmai in that honjozos include a small amount of neutral alcohol, added after the fermentation process is complete to enhance the inherent flavors of the sake. Honjozo sake is not necessarily sweeter than junmai, nor is it higher in alcohol. This honjozo from Niizawa Brewery is elegant and clean on the palate. Made from Yamada Nishiki rice milled to 60%, it brings out aromas of tropical fruit and red berries with floral, herbal touches. A hint of almond and a creamy texture lead to a dry finish.
