Brunnhilde Claux, winemaker for one of our favorite biodynamic wineries in the Minervois—Domaine de Courbissac—also produces wines outside of the appellation system. This ‘Notre Terre’ white wine consists of a curious blend of direct-pressed grenache and terret gris, aged for nine months in amphora. Preserved lemon and grapefruit marmalade on the nose lead to a palate of lemon curd and a spicy, mineral, fresh lemon finish. Certified organic, low-intervention/natural wine.
