From the hills of Refrontolo, a small village nestled between two icons of Prosecco, Conegliano and Valdobbiadene, the De Stefani family has been carefully producing wines in Veneto since the late 1800s. Fourth-generation winemaker Alessandro De Stefani focuses on small, natural production using only certified organic grapes, eschewing the use of chemical pesticides, herbicides, or fertilizers. Compost > chemicals. This pinot grigio hails from 15-year-old, estate grown vines rooted in clay-rich alluvial soils. Grapes are destemmed and crushed, followed by a soft pressing and spontaneous fermentation with wild yeasts in temperature controlled stainless steel vats. Choosing to keep the wine on its fine lees for several months, frequently stirring, De Stefani coaxes lush texture and depth from the wine. An incredibly generous pinot grigio, this wine is not flippant or thoughtless, instead offering an elegant, layered, and refined take on a grape often taken for granted.
