Bénédicte and Manu Ruppert-Leroy run a family farm—one that just happens to also grow grapes—in the Aube Department. They follow the principles of biodynamics in all they do on the farm, which includes growing grains and raising sheep, horses, cows, and chickens. In the winery, they produce “vin nature”—that is, using no sulfur (since 2013) and no dosage. Almost all of their Champagnes come from one vintage of one vineyard each. This particular cuvée is the only exception: it consists of a blend from various plots and combines the harvests from 2011, 2012, and 2013. Bright Shiro plum, citrus peel, and intriguing minerality are grounded by a touch of earthy spice. Organically grown, biodynamically grown.
