The origins of Treasury Cider are steeped in early 20th Century US history: the farm's founder, Henry Morgenthau Jr., served as Secretary of the Treasury under FDR after a career in farming and conservation. Fishkill Farms, the home of Treasury Cider, is located just down the road from our shop in East Fishkill, on 270 acres, planted to over 80 varieties of apples, as well as other fruits and vegetables. Parts of the orchard are old-growth remnants of the original plantings by Henry, whose legacy is being carried on by his grandson, Josh Morgenthau. With a commitment to organic farming practices and Eco-certified integrated pest management, the team at Fishkill Farms grow their American-heirloom, European bittersweet, and dessert apples with utmost care and attention. ‘Colony’ is a cyser - a hybrid of hard cider and mead (fermented honey) - and this cuvée is a delightful co-ferment of Fishkill’s apple cider with the farm’s own apple blossom honey! This still, wild fermented cyser is lightly filtered, and features a unique palate of earthy, dry, lightly funky honeyed notes, accented with hints of petrol, beeswax, and wilted wildflower. Textural and complex, this is a one-of-a-kind taste of the Hudson Valley!
