Don’t tell mom and dad, but sometimes it pays to ignore the advice of our parents. Take for instance, third-generation winemaker Dimitar Kostadinov’s decision to transition the cultivation of his family’s vines to organics, opting to dry farm rather than irrigate - a decision his father was not necessarily jazzed about when Dimitar returned to his family’s 120 hectares of land in the Thracian Valley in 2006. In a true commitment to the bit, Dimitar even achieved certification in organics in 2013. In 2016, he pursued his curiosities and began experimenting with natural winemaking techniques with minimal intervention, inspired by the technical and philosophical aspects of biodynamics. This ‘Santimenti’ is a 50-50 split of native grape dimyat and the prized rkatsiteli directly pressed into stainless steel and fermented spontaneously with wild yeast. Following 6 months of aging on its fine lees and 1 month of batonnage, the wine is bottled unfined and unfiltered with minimal sulfites. Like a spritz of perfume applied hours ago, soft florals and whispers of citrus and stone fruit entice and delight on the palate. Certified organic, low-intervention/natural wine, vegan.
